Ingredients
  

For the cookie dough

  • 1 cup unsalted butter, softened Use room temperature butter for best results.
  • 1 cup granulated sugar
  • 2 large eggs Use room temperature eggs.
  • 1 tablespoon lemon zest
  • 1 cup lemon curd Use homemade or store-bought.
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting (optional) For serving.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare your baking sheets with parchment paper.
  • In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  • Add in the eggs, lemon zest, and vanilla extract. Mix well until fully combined.
  • Stir in the lemon curd until the mixture is smooth.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually combine the dry ingredients with the wet ingredients, mixing until just combined. Don’t overmix.
  • Using a cookie scoop or tablespoon, drop dough onto your prepared baking sheets, spacing them about 2 inches apart.

Baking

  • Bake for 10-12 minutes, until the edges are lightly golden but the center is still soft.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.

Serving

  • Dust with powdered sugar if desired before serving.
  • Serve fresh out of the oven or at room temperature, alongside tea or lemonade.

Notes

For a stronger lemon flavor, add more lemon zest or use homemade lemon curd. Chilling the dough for 30 minutes can help maintain the shape. Store leftover cookies in an airtight container.
