Preparation

  • Start by boiling water in a pot and adding the orzo. Cook according to package instructions, usually around 8-10 minutes. Once al dente, drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the sliced chicken breast and cook for about 5-7 minutes or until golden brown and cooked through.
  • Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  • Introduce the mixed vegetables to the skillet. Stir and cook for an additional 3-5 minutes until they are tender but still crisp.
  • Add the cooked orzo back into the skillet along with the lemon juice. Mix everything well until all ingredients are evenly coated and heated through.
  • Season with salt and pepper to taste, then remove from heat. Garnish with chopped fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat with a splash of water or olive oil if needed.
