Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream together softened unsalted butter and granulated sugar until light and fluffy (2-3 minutes).
  • Add lemon juice and vanilla extract, mix until well combined.
  • Drop spoonfuls of the dough onto a baking sheet lined with parchment paper, leaving space between each cookie.

Baking

  • Bake in the preheated oven for about 10 to 12 minutes, or until the edges turn golden.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
