Ingredients
  

For the Cookie Cups

  • 1 cup unsalted butter, softened Ensure butter is at room temperature for better mixing.
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

For the Lemon Filling

  • 2 large eggs
  • 1 cup granulated sugar This is for the filling.
  • 1/4 cup all-purpose flour This is for the filling.
  • 1/2 cup freshly squeezed lemon juice Fresh juice is preferred for better flavor.
  • 2 pieces lemons, zest Zest adds aroma and flavor.
  • 1/2 teaspoon vanilla extract
  • 1 cup powdered sugar, for dusting Optional, for serving.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy.
  • Add the flour, baking powder, and salt to the butter mixture. Mix until combined to form a crumbly dough.
  • Press the dough into the bottom and up the sides of a mini muffin tin, creating cookie cups. Make sure the dough is evenly distributed.
  • Bake the cookie crusts in the preheated oven for 10-12 minutes or until lightly golden.

Making the Filling

  • While the cookie cups are baking, prepare the lemon filling. In a separate bowl, whisk together 1 cup of granulated sugar, 1/4 cup of flour, eggs, lemon juice, lemon zest, and vanilla extract until smooth.
  • Once the cookie crusts are done, remove them from the oven and immediately pour the lemon filling into each cup, filling it to the top.
  • Bake again for 15-20 minutes, or until the filling is set.
  • Allow the cookie cups to cool in the tin for about 10 minutes before transferring them to a wire rack to cool completely.

Serving

  • Dust with powdered sugar before serving, if desired.

Notes
