  • 2 cups leftover turkey, shredded
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cups chicken broth High-quality or homemade preferred
  • 1 cup heavy cream Add right before serving
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • to taste salt and pepper
  • 2 tablespoons olive oil For sautéing

Preparation

  • In a large pot, heat 2 tablespoons of olive oil over medium heat.
  • Add the chopped onion, diced carrots, and celery to the pot, and sauté for 5-7 minutes until tender.
  • Introduce minced garlic and cook for one minute.
  • Stir in shredded turkey, combining it well with the vegetables.
  • Pour in chicken broth and add dried thyme, salt, and pepper to taste. Bring to a boil.
  • Once boiling, reduce the heat and let the soup simmer for about 20 minutes.
  • After 20 minutes, stir in heavy cream and heat through without boiling.
  • Taste and adjust seasoning as needed before serving.

Notes

Consider garnishing with fresh parsley or adding spinach before serving for color and nutrition. Works well with a side of crusty bread.
