Liquids and Seasonings

  • 1 can (28 ounces) crushed tomatoes Provides a rich tomato base.
  • 1 can (15 ounces) tomato sauce Adds depth to the flavor.
  • 4 cups beef broth Substitute with vegetable broth for a vegetarian version.
  • 1 teaspoon dried oregano Use fresh if available.
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes Optional for extra spice.

Pasta and Cheese

  • 8 ounces lasagna noodles, broken into pieces Breaking prevents clumping.
  • 1 cup ricotta cheese For a creamier texture, consider adding mozzarella.
  • 1/2 cup grated Parmesan cheese More can be added for serving.
  • Fresh leaves basil For garnish.

Preparation

  • Brown the ground beef in a large pot over medium-high heat. Drain excess grease.
  • Add chopped onion and minced garlic; cook until softened, about 5 minutes.
  • Stir in crushed tomatoes, tomato sauce, and beef broth.
  • Add dried oregano, basil, and red pepper flakes. Season with salt and pepper.

Cooking

  • Bring the soup to a boil, then reduce heat and let it simmer for about 15 minutes.
  • Add the broken lasagna noodles and cook until tender, about 10-12 minutes.

Serving

  • In a small bowl, combine ricotta cheese and grated Parmesan cheese.
  • Ladle soup into bowls and top with the ricotta mixture and fresh basil.
