Main Ingredients

  • 1 lb ground beef Use high-quality beef for best flavor.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 4 cups beef broth Homemade broth is recommended.
  • 2 cups water
  • 2 teaspoons Italian seasoning Adjust to taste.
  • 1 cup uncooked pasta (ziti or elbow) Pasta type can be varied.
  • 1 cup ricotta cheese For creaminess.
  • 1 cup shredded mozzarella cheese For topping.
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Cooking

  • Heat a large pot over medium heat and add the ground beef. Break it apart as it browns.
  • Once browned, add diced onion and minced garlic. Cook until onion is translucent.
  • Pour in crushed tomatoes, beef broth, and water. Stir in Italian seasoning, salt, and pepper.
  • Bring to a gentle boil, then add uncooked pasta. Lower the heat and simmer until pasta is al dente.
  • Fold in ricotta cheese, blending gently to keep dollops throughout the soup.
  • Serve hot, topped with shredded mozzarella and optional basil.

Notes

For storage, allow soup to cool, then refrigerate for 3-4 days. It can also be frozen for up to three months. Reheat on the stove or microwave, adding broth if it thickens.
