Ingredients
  

For the Marinade

  • 2 tablespoons gochujang (Korean chili paste) Adjust based on heat preference.
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 2 cloves garlic (minced)
  • 1 inch fresh ginger (grated)
  • to taste salt and pepper

For the Skewers

  • 1 lb chicken thighs (boneless, skinless) Opt for organic for better flavor.
  • as needed Skewers If using wooden skewers, soak in water for 30 minutes.

Preparation

  • Combine gochujang, soy sauce, sesame oil, honey, minced garlic, grated ginger, salt, and pepper in a bowl to create the marinade. Stir well until smooth.
  • Cut chicken thighs into bite-sized pieces and mix thoroughly with the marinade until well coated. Marinate for at least 30 minutes, preferably several hours or overnight.
  • Preheat grill to medium-high heat while the chicken marinates.
  • Thread marinated chicken pieces onto skewers, ensuring about four to six pieces per skewer, and spacing them out slightly.

Grilling

  • Place skewers on the hot grill. Grill for 8 to 10 minutes, turning occasionally, until the chicken is cooked through and has an internal temperature of 165°F.

Serving

  • Remove skewers from the grill, serve warm, and garnish with sesame seeds or sliced green onions if desired.

Notes

For enhanced flavor, marinate the chicken longer. Avoid overcrowding the grill for even cooking. Use a meat thermometer for perfect results.
