Delightful fusion of marinated bulgogi beef and spicy kimchi, served in warm hoagie rolls.

Ingredients
  

For the Marinade

  • 1 pound beef sirloin, thinly sliced Thinly sliced against the grain for tenderness.
  • 1 cup kimchi, roughly chopped Adds spicy and tangy flavor.
  • 1/4 cup soy sauce For savory flavor.
  • 2 tablespoons sugar Balances the saltiness.
  • 1 tablespoon sesame oil Adds nuttiness.
  • 2 cloves garlic, minced Enhances flavor.
  • 1 inch piece ginger, minced Fresh ginger adds warmth.
  • 1 tablespoon gochujang (Korean chili paste) For spiciness.
  • 1 tablespoon vegetable oil For cooking beef.

Vegetables

  • 1 onion, thinly sliced onion, thinly sliced Adds sweetness.
  • 1 bell pepper, thinly sliced bell pepper, thinly sliced For color and flavor.

To Serve

  • 4 slices provolone cheese For melting on top.
  • 4 hoagie rolls hoagie rolls Soft and warm.
  • Green onions, for garnish Chopped, for freshness.
  • Sesame seeds, for garnish Adds crunch.

Instructions
 

Marinating and Cooking Beef

  • In a bowl, mix soy sauce, sugar, sesame oil, minced garlic, minced ginger, and gochujang. Combine well and add the sliced beef. Toss to coat and let it marinate for at least 30 minutes.
  • Heat vegetable oil in a large skillet over medium-high heat. Add the marinated beef and cook until browned, around 3 to 5 minutes, stirring occasionally.
  • Add the sliced onion and bell pepper to the skillet. Cook until the vegetables are tender, about 3 to 4 minutes.

Assembling Cheesesteaks

  • Split the hoagie rolls and place them on a baking sheet. Optionally toast them in the oven.
  • Fold in the chopped kimchi to the beef and vegetables, allowing it to heat through for 1 to 2 minutes.
  • Divide the beef and vegetable mixture among the toasted hoagie rolls and top each with a slice of provolone cheese. Return to the oven for a couple of minutes to melt the cheese.
  • Garnish with chopped green onions and sesame seeds. Serve hot.
