  • 1 tablespoon olive oil For sautéing
  • 1 piece kielbasa sausage, cut into 1-inch pieces Use high-quality kielbasa for best flavor
  • 1 medium onion, diced
  • 1 tablespoon minced garlic
  • 3 14 ounce cans vegetable broth
  • 1 14 ounce can stewed tomatoes With juice
  • 1.5 cups chopped carrots
  • 1 8 ounce can tomato sauce
  • 1 cup water
  • 1.5 teaspoons salt-free seasoning blend (e.g., Mrs. Dash®)
  • 1.5 cups bow-tie pasta (farfalle)

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add kielbasa pieces to the pot and let them brown for about 5 minutes.
  • Incorporate the diced onion and minced garlic, cooking for another 10 minutes until the onion is soft.
  • Pour in the vegetable broth, stewed tomatoes (with juice), chopped carrots, tomato sauce, and water. Stir well.
  • Add the salt-free seasoning blend and stir again.
  • Increase heat until the mixture reaches a boil, then reduce heat to low.
  • Cover the pot and let the soup simmer for 30 minutes.
  • Add the bow-tie pasta and continue to simmer for another 12 minutes or until the pasta is cooked.
  • Adjust any seasonings before serving.
