  • 4 pieces boneless, skinless chicken breast halves

Marinade

  • 3 tablespoons soy sauce or use coconut aminos for a gluten-free option
  • 2 tablespoons honey
  • 1 tablespoon vegetable oil
  • 1 piece Juice of 1 lime
  • 1 teaspoon minced garlic
  • 1 teaspoon fresh cilantro, finely chopped
  • 2 tablespoons red bell pepper, finely chopped
  • 1 pinch crushed red pepper or minced red jalapeño for heat (optional)

Instructions
 

Preparation

  • In a medium bowl, whisk together soy sauce, honey, vegetable oil, lime juice, minced garlic, cilantro, and red bell pepper to prepare the marinade.
  • Place chicken breasts in a large zip-top bag or shallow dish and pour the marinade over them, ensuring they are thoroughly coated.
  • Seal the bag or cover the dish and refrigerate for at least 30 minutes, up to 2 hours for enhanced flavor.

Grilling

  • Preheat the grill to high heat (or medium-high for a grill pan) and lightly oil the surface.
  • Remove chicken from the marinade, letting excess drip off, and discard the marinade.
  • Grill the chicken for approximately 6 to 8 minutes on each side, until the internal temperature reaches 165°F (75°C).
  • Transfer grilled chicken to a plate, cover loosely with foil, and let rest for about 5 minutes before serving.
  • For extra char, place grilled chicken under the broiler for about 2 minutes (optional).
