  • 1 lb Italian sausage Use your preferred type of sausage.
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth Low sodium option recommended.
  • 2 cups kale, chopped Rinse and dry before chopping.
  • 1 cup heavy cream For a lighter soup, use half-and-half.
  • 1 tsp red pepper flakes Adjust for spice level preference.
  • to taste Salt and pepper

Cooking

  • Heat a large pot over medium heat and add the Italian sausage, cooking until browned for about 5 to 7 minutes.
  • Add the chopped onion and minced garlic. Sauté until the onion is translucent and soft, about 2 to 3 minutes.
  • Pour in the chicken broth, increase the heat, and bring to a boil.
  • Once boiling, add the chopped kale and red pepper flakes. Stir and let simmer for 5 minutes.
  • Reduce heat to low and incorporate the heavy cream, stirring until well combined and heated through.
  • Season with salt and pepper to taste and serve.

Notes
