  • 1/4 cup pizza sauce For filling the bites

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the cottage cheese, egg, almond flour, garlic powder, Italian seasoning, salt, and black pepper. Mix until you achieve a smooth batter.
  • Fold in the shredded mozzarella cheese, ensuring it is evenly distributed throughout the mixture.
  • Spoon the mixture into small, dollop-sized portions on the prepared baking sheet, spacing them a few inches apart for even baking.
  • Use a spoon to create a small indent in the center of each portion, filling it with a small amount of pizza sauce and your desired toppings, such as pepperoni.

Cooking

  • Bake in the preheated oven for 20-25 minutes or until the edges turn golden brown and the cheese begins to bubble.
  • Remove from the oven and let cool for a few minutes before garnishing with fresh basil, if desired. Serve warm.
