  • 1/4 cup low-carb sweetener (like erythritol or stevia) Adjust sweetness to taste.
  • 1 teaspoon vanilla extract For flavor enhancement.
  • a pinch salt To balance the sweetness.

Preparation

  • Place the cottage cheese in a blender or food processor and blend until smooth.
  • Add the almond milk, low-carb sweetener, vanilla extract, and salt. Blend again until smooth and creamy.
  • Taste and adjust sweetness if needed.
  • Transfer to a mixing bowl, cover with plastic wrap, and freeze for 1 to 2 hours.
  • Stir vigorously to incorporate any ice crystals that formed, then return to the freezer for another 2 to 4 hours until desired consistency is reached.
  • Scoop into bowls and add toppings if desired.

Notes

To store ice cream, keep in an airtight container with plastic wrap on the surface. Will last for about two weeks, but best enjoyed within the first week.
