  • 1 lbs Ground beef Choose 80/20 or 85/15 fat content for flavor.
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 4 cups Beef broth Can substitute with chicken broth.
  • 1 cup Heavy cream Can substitute with full-fat coconut milk.
  • 1 cup Shredded cheddar cheese Other cheese varieties like pepper jack can be used.
  • 1 cup Cauliflower, riced Adds texture and keeps the dish low carb.
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper To taste.
  • Chopped green onions for garnish Adds freshness.

Preparation

  • Heat a large pot over medium heat and add the ground beef. Cook until thoroughly browned, breaking up large pieces with a wooden spoon. Drain any excess fat.
  • Add the diced onion and minced garlic to the pot. Sauté for 3-5 minutes until the onion is translucent.
  • Pour in the beef broth and increase the heat to reach a gentle simmer.
  • Stir in the riced cauliflower, Worcestershire sauce, salt, and pepper. Cook for 5-7 minutes until the cauliflower is tender.
  • Reduce the heat to low, then add the heavy cream and shredded cheddar cheese. Stir continuously until the cheese has melted and the soup is creamy.
  • Ladle the soup into bowls and garnish with chopped green onions before serving.

Notes
