Instructions
 

Preparation

  • Preheat your oven to 180°C (350°F) for even baking.
  • Gather a 9 x 4 inch loaf pan and line it with parchment paper.

Mixing

  • In a large mixing bowl, combine almond flour, coconut flour, baking powder, salt, and cinnamon.
  • In another bowl, cream the softened butter with your chosen granulated sweetener for about 2-3 minutes until fluffy.
  • Add the eggs to the butter mixture one at a time, whisking well after each addition.
  • Incorporate banana extract and Greek yogurt and whisk until smooth.
  • Gently fold the dry ingredients into the wet mixture until just combined.
  • Fold in walnuts or chocolate chips if using.

Baking

  • Pour the batter into the prepared loaf pan and smooth the top.
  • Cover loosely with aluminum foil and bake for approximately 45-50 minutes, removing the foil around the 40-minute mark.
  • Check doneness with a toothpick; it should come out clean when inserted into the center.
