Main Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 2 pieces ripe California avocados, halved and pitted
  • 2 tablespoons olive oil
  • 2 teaspoons lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions
 

Preparation

  • Preheat your grill to medium-high heat.
  • In a small bowl, mix together the olive oil, lime juice, garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Brush the marinade generously over both sides of the chicken breasts. Allow the chicken to marinate for at least 15 minutes.

Grilling

  • Once the grill is ready, place the marinated chicken breasts on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  • While the chicken is grilling, lightly brush the cut sides of the avocados with olive oil and season with salt and pepper. Place them cut-side down on the grill for about 2-3 minutes until grill marks form.
  • Once the chicken is cooked through, remove it from the grill and let it rest for a few minutes.
  • Slice the chicken breasts and serve with the grilled avocado halves on the side.

Notes

For best results, marinate chicken for several hours or overnight. Ripe avocados should yield slightly to pressure.
