  • 2 cups cooked rice (preferably day-old)
  • 4 cloves garlic, minced
  • 3 tablespoons vegetable oil (or sesame oil)
  • 2 large eggs, beaten
  • 1 cup mixed vegetables (like peas, carrots, and corn)
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 3 tablespoons green onions, sliced
  • 1 teaspoon sesame seeds (for garnish)
  • Salt and pepper to taste

  • Heat the vegetable or sesame oil in a large skillet or wok over medium heat.
  • Add the minced garlic and stir-fry for about 30 seconds until fragrant, taking care not to burn it.
  • Push the garlic to one side of the pan and pour in the beaten eggs. Scramble them gently until fully cooked.
  • Add the mixed vegetables to the pan and stir everything together for a couple of minutes until the vegetables are heated through.
  • Incorporate the cooked rice into the skillet, breaking up any clumps as you go. Stir well to mix all the ingredients.
  • Drizzle in the soy sauce and, if using, the oyster sauce. Combine thoroughly so the rice is evenly coated.
  • Toss in the sliced green onions, and season the dish with salt and pepper to taste.
  • Stir everything together one last time and let it fry for an additional 2-3 minutes to allow for some crispy bits to form.
  • Remove from heat, and garnish with sesame seeds before serving.

Notes

To prevent mushy rice, use day-old rice. You can customize the recipe with various vegetables and proteins. Serve with pickled vegetables or in lotus leaf wraps for creativity.
