  • 1/2 cup sliced mushrooms Feel free to use any variety.
  • 1 tablespoon soy sauce Adjust to taste for more umami flavor.

For Garnishing

  • 1 stalk chopped green onion Adds color and freshness.

Instructions
 

Preparation

  • Pour 2 cups of water into a medium-sized pot and bring it to a rolling boil over medium-high heat.
  • While waiting for the water to boil, slice the onion and mushrooms thinly.

Cooking

  • Once the water is boiling, add the sliced onion and mushrooms to the pot.
  • Reduce the heat to low and allow the mixture to simmer for about 10-15 minutes.
  • After simmering, stir in 1 tablespoon of soy sauce.
  • Season with salt and pepper to taste.
  • Ladle the soup into bowls and garnish with chopped green onions.
