  • 1 cup sweet corn (canned or frozen) Drained if using canned
  • 1-2 jalapenos, diced Adjust based on heat preference
  • 1 cup shredded cheese (cheddar or a blend)
  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup milk
  • 1 large egg
  • as needed Oil for frying Use enough oil for even frying

Instructions
 

Preparation

  • In a large mixing bowl, combine the sweet corn, diced jalapenos, and shredded cheese.
  • In another bowl, whisk together the all-purpose flour, cornmeal, baking powder, salt, and black pepper.
  • In a separate bowl, mix the milk and egg until well combined.
  • Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Avoid overmixing.

Frying

  • Heat oil in a deep frying pan over medium heat.
  • Using a spoon, drop small amounts of the mixture into the hot oil, cooking in batches if necessary.
  • Fry the nuggets until golden brown on all sides, approximately 3-4 minutes.
  • Remove from oil and place on a plate lined with paper towels to drain excess oil.

Serving

  • Serve warm with a selection of dipping sauces or on a platter with fresh veggies.
