chocolate graham cracker crumbs

Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine chocolate graham cracker crumbs, light brown sugar, and melted butter.
Line 18 muffin cups with paper liners and press 2 tablespoons of the crumb mixture into the bottom of each cup.
In a separate bowl, beat the softened cream cheese until smooth and creamy. Add sugar and mix until light and fluffy.
Add eggs one at a time, beating well after each addition, then mix in sour cream and vanilla extract.
Divide the cheesecake filling equally among the muffin cups, using about 2 tablespoons per cup.
Bake for 15-18 minutes until set around the edges but slightly jiggly in the center.
Remove from the oven and let cool on a wire rack for about an hour.
For the ganache, heat dark chocolate and heavy cream in the microwave until melted, stirring until smooth.
Let ganache cool slightly, then use it to pipe Jack's eyes and mouth onto each cheesecake.
