Preparation

  • Slice the focaccia bread in half horizontally to create a top and bottom layer.
  • Spread the pesto sauce evenly over the inner sides of both focaccia halves.
  • Layer the turkey breast over the bottom half of the focaccia.
  • Place the slices of fresh mozzarella cheese on top of the turkey.
  • Add the sliced tomatoes and sprinkle with salt and pepper to taste.
  • Layer the arugula or spinach over the tomatoes for added freshness.
  • If desired, add slices of red onion or bell peppers for extra crunch.
  • Drizzle some extra virgin olive oil over the top for enhanced flavor.
  • Cap the sandwich with the top half of the focaccia.
  • Press down gently to help combine the ingredients before slicing into smaller pieces.
  • Serve immediately or prepare for later.
