  • 3 medium carrots, diced
  • 2 stalks celery, diced
  • 1 can diced tomatoes (14.5 ounces) Contributes acidity.
  • 4 cups chicken broth Use homemade for richer flavor.
  • 2 cups spinach or kale For added nutrition and color.
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper Adjust according to sausage saltiness.
  • Parmesan cheese for serving Adds a salty finish.

Instructions
 

Preparation

  • Heat a large pot over medium heat. Add the Italian sausage, breaking it apart as it cooks. Stir occasionally until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
  • Add the chopped onion to the pot. Cook for a few minutes until the onion softens. Stir in the minced garlic, diced carrots, and diced celery. Sauté for about 5-6 minutes until the vegetables are tender and fragrant.

Cooking

  • Pour in the diced tomatoes and chicken broth. Stir and bring to a boil.
  • Once boiling, add the tortellini and cook according to package instructions, typically around 3-5 minutes.
  • Stir in the spinach or kale and let it wilt for about 2-3 minutes.
  • Taste the soup and season with salt and pepper as needed.

Serving

  • Ladle the soup into bowls. Top with grated Parmesan cheese before serving.

Notes

Garnish with fresh herbs like parsley or basil for enhanced presentation. Serve with crusty bread or a fresh salad for a fuller meal. Store in an airtight container for up to 3-4 days in the refrigerator or freeze for up to 3 months, but do not freeze with the tortellini in it.
