Italian Florentine Cookies

Ingredients
  

Nut and Fruit Base

  • 1 cup sliced almonds Use fresh almonds for best flavor.
  • 1 cup chopped mixed nuts (hazelnuts, walnuts, or pecans) Choose a mix of your favorite nuts.
  • 1 cup dried fruits (cranberries, apricots, or cherries) Make sure fruits are chopped small if large.
  • 1 cup all-purpose flour Can be substituted with gluten-free flour.

Sugary Mixture

  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1/2 cup unsalted butter Melt before mixing.
  • 1 tablespoon vanilla extract Use pure vanilla for best results.

Chocolate Topping

  • 1 cup semisweet chocolate chips Melt for dipping or drizzling.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium saucepan, combine the sugar, corn syrup, and butter. Heat over medium heat, stirring constantly until the mixture reaches a gentle boil.
  • Remove the saucepan from the heat and stir in the vanilla extract. Allow the mixture to cool slightly.
  • In a large bowl, mix the sliced almonds, chopped nuts, dried fruits, and flour together until well combined.
  • Pour the cooled sugar mixture into the nut and fruit mixture, stirring until everything is evenly coated.
  • Using a tablespoon, drop mounds of the mixture onto the prepared baking sheet, leaving space between them to allow for spreading.

Baking

  • Bake in the preheated oven for about 12-15 minutes, or until the edges turn golden brown.
  • Remove the baking sheet from the oven and let the cookies cool for a few minutes before transferring them to a wire rack to cool completely.
  • Once completely cooled, melt the semisweet chocolate chips in a microwave or double boiler. Dip the bottom of each cookie into the chocolate or drizzle it over the top.
  • Allow the chocolate to set before serving or storing.

Notes

Store cookies in an airtight container to maintain crunch. Can freeze for up to three months. For festive variations, use colored nuts and fruits during holidays.
