Ingredients
  

For the cookie dough

  • 1 cup unsalted butter, softened Use softened butter for the best texture.
  • 3/4 cup granulated sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Weigh for accuracy.
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • optional powdered sugar for dusting For added sweetness.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 3 to 5 minutes.
  • Add the egg yolks one at a time, mixing well after each addition, then add the vanilla extract and mix until combined.
  • In a separate bowl, whisk together the flour, salt, and baking powder.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined; avoid overmixing.
  • Pipe the dough using a cookie press, scoop into small balls, or roll out and cut into shapes before placing on the prepared baking sheet.

Baking

  • Bake for 10 to 12 minutes, or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  • Dust with powdered sugar if desired just before serving.

Notes

Consider chilling the dough for about 30 minutes before baking to prevent spreading.
