Ingredients
  

Cookie Base

  • 1 cup unsalted butter, softened Make sure butter is softened but not melted.
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract Use real vanilla for best flavor.
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Topping

  • granulated sugar for topping Use a thin layer for optimal caramelization.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In another bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet ingredients until just combined. Avoid overmixing.
  • Drop spoonfuls of dough onto the prepared baking sheets, placing them about two inches apart.
  • Flatten each mound slightly with the palm of your hand.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Remove from oven and sprinkle a thin layer of granulated sugar over the tops of the cookies while they are still warm.
  • To create the caramelized crust, use a kitchen torch to gently heat the sugar until it melts and forms a crispy layer.
  • Let the cookies cool completely before serving.

Notes
