  • 1 cup Irish whiskey Use high-quality whiskey for best flavor.
  • 1 cup heavy cream Can substitute with Greek yogurt for a lighter version.
  • 2 tablespoons olive oil For sautéing.
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme Fresh thyme preferred.
  • Salt and pepper to taste
  • Fresh parsley for garnish Add for color and freshness.

Preparation

  • Heat the olive oil in a large skillet over medium heat.
  • Season chicken breasts generously with salt and pepper.
  • Add chopped onion and minced garlic to the skillet, sauté until translucent (about 3-4 minutes).

Cooking

  • Add the seasoned chicken breasts to the skillet and cook until browned (5-7 minutes per side).
  • Pour in the Irish whiskey and let it simmer to deepen flavors and lift fond from the skillet.
  • Add heavy cream and thyme, stir to combine, and simmer gently until the sauce thickens (about 10 minutes).

Serving

  • Sprinkle freshly chopped parsley on top before serving.
