Ingredients
  

Main Ingredients

  • 2 pounds boneless, skinless chicken breasts Chicken breasts should be of equal size for even cooking.
  • 1 cup low-sodium chicken broth Can substitute with vegetable broth.
  • 2 tablespoons olive oil For sautéing.

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • to taste pinch Salt and pepper

Garnish

  • to taste Fresh herbs Optional for garnish.

Instructions
 

Preparation

  • Season the chicken breasts with garlic powder, onion powder, smoked paprika, oregano, salt, and pepper, coating evenly.
  • Turn on the Instant Pot and select the sauté function. Add olive oil and allow it to heat.

Cooking

  • Once hot, add the seasoned chicken breasts and sear for 3-4 minutes on each side until golden brown.
  • Remove the chicken and set aside. Pour in the chicken broth and scrape the bottom of the pot to loosen any bits.
  • Return the chicken to the pot, set to manual pressure, and cook on high pressure for 10 minutes.
  • Allow for 5 minutes of natural pressure release, then perform a quick release for any remaining pressure.
  • Check the internal temperature; if it’s below 165°F, cook an additional 2-3 minutes under pressure.
  • Remove the chicken, let it rest for a few minutes, then slice or shred and drizzle with cooking liquid before serving.

Notes

Allow chicken to cool before storing. Store leftovers in an airtight container with cooking broth. Can freeze for up to 3 months.
