  • 2 pounds boneless, skinless chicken breasts High-quality chicken recommended.
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Optional: fresh herbs (such as rosemary or thyme) For added flavor.

Preparation

  • Prepare the chicken breasts by cutting them in half if they are large for even cooking.
  • Season the chicken with garlic powder, onion powder, paprika, salt, and black pepper, rubbing evenly.

Cooking

  • Turn the Instant Pot to sauté setting and heat olive oil for about a minute.
  • Add seasoned chicken breasts to the pot and sear for 2-3 minutes on each side until slightly golden.
  • Pour in the chicken broth and add fresh herbs if using.
  • Close the lid, set the pressure valve to sealing, and cook on high pressure for 8-10 minutes.
  • After cooking, allow the Instant Pot to naturally release pressure for 5 minutes before quick releasing any remaining pressure.
  • Check the internal temperature of the chicken; it should reach at least 165°F (75°C).
  • Remove chicken from pot and let it rest before slicing or shredding.
  • Optionally, use remaining broth to create a sauce by reducing the liquid on sauté setting.
