  • 4 pieces chicken breasts Use boneless, skinless chicken breasts for best results.
  • 2 tablespoons olive oil For sautéing.
  • 1 medium onion, chopped Adds sweetness and flavor.
  • 2 cups mushrooms, sliced Button or cremini mushrooms work well.
  • 2 cups diced tomatoes Canned or fresh can be used.
  • 1 cup chicken broth For added moisture and flavor.
  • 1 tablespoon fresh thyme Can substitute with dried thyme.
  • to taste salt and pepper Season to your preference.
  • for garnish Fresh parsley Chopped, for serving.

Preparation

  • Heat the olive oil in a large skillet over medium heat.
  • Add the chopped onion and sauté for a few minutes until translucent and fragrant.
  • Introduce the sliced mushrooms and cook until they release moisture and start to brown.

Cooking

  • Season the chicken breasts with salt and pepper.
  • Add the chicken breasts to the skillet and sear for about 4-5 minutes on each side until golden brown.
  • Pour in the diced tomatoes and chicken broth, then stir in the fresh thyme.
  • Bring the mixture to a gentle simmer, cover the skillet and cook for about 20 minutes or until chicken is fully cooked at 165°F (74°C).
  • Garnish with fresh parsley before serving.

Notes

To store leftovers, allow cooling and transfer to an airtight container. Refrigerate for 3-4 days or freeze for 2-3 months. Reheat gently before serving.
