  • 4 medium sweet potatoes Washed and poked with a fork
  • 1 pound ground beef Use lean cuts for better health benefits
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil For sautéing
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup hot honey
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheese (optional) For topping
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash the sweet potatoes thoroughly and poke the skins with a fork several times.
  • Place the sweet potatoes on a baking sheet and roast in the oven for about 45-50 minutes or until soft.
  • While the sweet potatoes roast, heat the olive oil in a large skillet over medium heat.
  • Add the chopped onion and sauté until translucent (about 5 minutes).
  • Stir in the minced garlic and cook for another minute until fragrant.

Cooking

  • Add the ground beef to the skillet, breaking it apart as it cooks until browned (about 7-10 minutes).
  • Mix in the smoked paprika, cumin, salt, and black pepper, stirring until evenly coated.
  • Incorporate the black beans and corn, cooking for an additional 5 minutes.
  • Once the sweet potatoes are ready, remove them from the oven and let them cool slightly.
  • Slice each sweet potato in half lengthwise and scoop out some flesh to make space for the filling.
  • Mix the hot honey into the ground beef mixture and stir until evenly combined.
  • Spoon the hot honey beef mixture generously into the hollowed sweet potato halves.
  • If you choose, top with shredded cheese and place back in the oven for 5-7 minutes to melt the cheese.
  • Remove from the oven and garnish with fresh cilantro before serving.
