Ingredients
  

For the Sweet Potatoes

  • 4 medium sweet potatoes Wash and pierce with a fork before roasting.

For the Beef Filling

  • 1 pound ground beef Use lean ground beef for healthier option.
  • 1 tablespoon olive oil For sautéing.
  • 1 small onion, diced Adds sweetness and depth to the filling.
  • 2 cloves garlic, minced Enhances flavor.
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder Adjust based on heat preference.
  • 1/4 cup hot honey
  • to taste Salt and pepper For seasoning.
  • Fresh cilantro, chopped (for garnish)
  • Avocado slices (for serving)
  • Crumbled feta or goat cheese (optional)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash the sweet potatoes and pierce them a few times with a fork. Place them on a baking sheet and roast for about 45-60 minutes or until soft.

Cooking the Beef

  • While the sweet potatoes roast, heat olive oil in a large skillet over medium heat. Add diced onion and cook until translucent, about 5 minutes.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the ground beef to the skillet. Use a wooden spoon to break the meat into small pieces. Cook until browned and cooked through.
  • Season the meat with smoked paprika, cumin, chili powder, salt, and pepper. Stir to combine.
  • Drizzle the hot honey over the cooked beef and stir until the meat is well coated. Remove from heat.

Assembly and Serving

  • Once the sweet potatoes are cooked, let them cool slightly. Slice each potato in half lengthwise and scoop out a bit of the flesh to create a boat.
  • Fill each sweet potato half with the hot honey ground beef mixture.
  • Serve warm and garnish with chopped cilantro and avocado slices. If desired, sprinkle some crumbled feta or goat cheese on top.

Notes

For variation, substitute ground chicken or turkey, or use lentils for a vegetarian option. Adjust spices according to preference.
