  • 2 large cucumbers Fresh and firm
  • 1/4 cup honey Adjust to taste
  • 1/4 cup fresh lime juice Freshly squeezed
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup fresh cilantro, chopped (optional) For garnish and additional flavor

Preparation

  • Wash the cucumbers under cold water. Peel if preferred, or leave the skin on for added crunch.
  • Slice the cucumbers into thin rounds using a knife or mandoline.
  • In a small bowl, whisk together honey, lime juice, salt, pepper, and olive oil until well combined and smooth.
  • In a large bowl, place the sliced cucumbers and pour the honey-lime dressing over them.
  • Toss gently to coat the cucumbers evenly with the dressing. Add chopped cilantro if desired.
  • Let the salad sit for about 10 minutes to allow the flavors to meld.
  • Serve immediately or refrigerate for up to an hour before serving.
