Preparation

  • In a bowl, mix together honey, minced garlic, soy sauce, olive oil, salt, and pepper. Whisk until well combined.
  • Pat chicken thighs dry with a paper towel, then season with additional salt and pepper if desired.

Cooking

  • Place the seasoned chicken thighs in your crock pot and pour the honey garlic mixture over them, coating all sides.
  • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easily pulls apart with a fork.
  • Optionally, thicken the sauce by transferring it to a saucepan and simmering until reduced to your desired thickness.
