  • 4 pieces boneless, skinless chicken thighs
  • 2 large sweet potatoes, peeled and cubed
  • 1/4 cup honey
  • 1/4 cup soy sauce (or tamari for a gluten-free option)
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons olive oil

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine honey, soy sauce, minced garlic, and grated ginger. Mix well to create your marinade.
  • Add the chicken thighs to the marinade and let them soak for at least 15 minutes (marinating for an hour enhances the flavor).
  • Toss the cubed sweet potatoes in olive oil, salt, and pepper on a large baking sheet until evenly coated.

Cooking

  • After marinating, remove the chicken from the marinade and place it on the baking sheet next to the sweet potatoes. Pour any remaining marinade over the chicken.
  • Bake in the oven for 25 to 30 minutes or until the chicken is cooked through, reaching an internal temperature of 165°F (75°C) and the sweet potatoes are tender.

Serving

  • Let it sit for a couple of minutes before serving and garnish with freshly chopped parsley or cilantro if desired.
