Ingredients
  

For the Honey BBQ Chicken

  • 1.5 lbs boneless, skinless chicken thighs (or breasts) Thighs add moisture; breasts can be used as a lighter alternative.
  • 1 cup honey BBQ sauce Store-bought or homemade.
  • 1 tablespoon olive oil For searing.
  • 0.5 teaspoon garlic powder Add to season the chicken.
  • Salt and pepper To taste.

For the Creamy Garlic Parmesan Potatoes

  • 1.5 lbs baby gold potatoes, halved or quartered Cut evenly for cooking.
  • 2 tablespoons unsalted butter For sautéing the potatoes.
  • 3 cloves garlic, minced For flavor.
  • 0.75 cup heavy cream Used for creaminess.
  • 0.5 cup grated parmesan cheese Add last for creaminess.
  • 0.5 teaspoon onion powder For additional flavor.
  • Salt and black pepper To taste.
  • Fresh parsley, for garnish Optional for color.

Instructions
 

Preparation of Chicken

  • Pat the chicken dry with a paper towel, then season both sides with garlic powder, salt, and pepper.
  • Heat a large skillet over medium-high heat and add olive oil.
  • Sear the chicken for about 3–4 minutes on each side, until golden.

Cooking the Chicken

  • Reduce heat to medium and pour honey BBQ sauce over the chicken in the skillet.
  • Coat each piece with the sauce and simmer for about 6–8 minutes until fully cooked.
  • Remove chicken from the pan and set aside.

Sautéing the Potatoes

  • In the same skillet, melt unsalted butter over medium heat.
  • Add baby potatoes and cook for about 5–6 minutes until golden and slightly softened.
  • Stir in minced garlic and onion powder, and sauté for another 2 minutes.

Making the Sauce

  • Pour heavy cream into the skillet and bring to a gentle simmer.
  • Add grated parmesan cheese and mix until melted and thickened.
  • Season with salt and black pepper, cooking until potatoes are fork-tender, about 8–10 minutes.

Combining and Serving

  • Return the glazed chicken to the skillet and spoon sauce over the chicken.
  • Let everything simmer on low heat for 2–3 minutes.
  • Garnish with fresh parsley if desired and serve hot.
