  • 1 pound Chicken Breast, sliced into thin strips Use fresh chicken for best flavor.
  • 1 cup Cashews, unsalted Can substitute with almonds or peanuts.
  • 1 red and green Bell Peppers, sliced For color contrast; can use other varietals.
  • 1 cup Broccoli Florets Ensure they are fresh for better crunch.
  • 1 medium Carrot, sliced can add more for sweetness.

Sauce ingredients

  • 1/4 cup Soy Sauce Can substitute with tamari for gluten-free.
  • 2 tablespoons Honey Adjust sweetness to preference.
  • 3 cloves Garlic, minced Can use garlic powder if preferred.
  • 1 tablespoon Fresh Ginger, minced Fresh ginger enhances the flavor.
  • 2 tablespoons Sesame Oil Adds a nutty flavor.
  • 1 tablespoon Cornstarch For thickening the sauce.
  • 1/2 cup Chicken Broth Can use vegetable broth for vegetarian option.

Garnish

  • to taste Salt and Pepper Adjust according to preference.
  • Scallions, for garnish Chopped for added flavor and presentation.

Instructions
 

Preparation

  • Prep all ingredients: Slice chicken, chop vegetables, and mince garlic and ginger.
  • In a bowl, combine chicken, soy sauce, garlic, and ginger. Marinate for 10-15 minutes.
  • Mix honey, cornstarch, and chicken broth in another bowl to make the sauce.

Cooking

  • Heat sesame oil in a skillet or wok over medium-high heat.
  • Add marinated chicken and stir-fry for 5-7 minutes until browned.
  • Stir in the bell peppers, broccoli, and carrots, cooking for an additional 4-5 minutes.
  • Pour in the sauce and cook for another 2-3 minutes, stirring until thickened.
  • Add cashews, stirring to combine and warm them slightly.
  • Taste and adjust seasoning with salt and pepper as necessary.

Serving

  • Serve warm over rice or noodles, garnished with scallions.
