  • 1 rotisserie chicken – shredded For best flavor, choose a well-seasoned chicken.
  • 8 oz mushrooms – sliced Any variety of mushrooms can be used.
  • 1 onion – diced Yellow or white onion works well.
  • 2 carrots – diced Adds sweetness and color.
  • 2 stalks celery – diced Provides a nice crunch.
  • 4 cups chicken broth Use low-sodium broth for better control of saltiness.
  • 1 cup heavy cream Can substitute with half-and-half for lighter option.
  • 2 cloves garlic – minced Fresh garlic enhances flavor.
  • 1 tsp thyme Fresh or dried thyme can be used.
  • Salt and pepper – to taste Adjust seasoning according to preference.
  • 2 tbsp olive oil For sautéing vegetables.

Instructions
 

Preparation

  • Heat two tablespoons of olive oil in a large pot over medium heat.
  • Add the diced onion, carrots, and celery. Sauté for 5 to 7 minutes until softened.
  • Stir in the minced garlic and sliced mushrooms, cooking for an additional 4 to 5 minutes until mushrooms are tender.
  • Add the shredded rotisserie chicken, chicken broth, thyme, and a sprinkle of salt and pepper. Bring to a gentle boil.

Simmering

  • Reduce heat and allow the mixture to simmer for 15 minutes.

Finishing Touch

  • Stir in the heavy cream and simmer for an additional 5 minutes.
  • Serve warm, garnished with fresh herbs if desired.
