Ingredients
  

For the cookies

  • 1 box 15.25 oz. box Devil's Food cake mix
  • 1 stick unsalted butter, softened
  • 1 large egg, beaten

For the filling

  • 2 cups powdered sugar
  • 1 stick butter, softened
  • 1 tablespoon milk
  • ½ teaspoon peppermint extract
  • ¼ teaspoon vanilla extract

For garnish

  • Peppermint Crunch Sprinkles For garnish

Instructions
 

Preparation

  • Preheat your oven to 350°F (180°C).
  • In a large mixing bowl, combine the Devil's Food cake mix with the softened butter. Beat in the beaten egg until the mixture is smooth.

Forming Cookies

  • Use a tablespoon to scoop out portions of the dough and roll them into small balls. Place each ball on a baking sheet lined with parchment paper, spacing them a couple of inches apart. Slightly flatten them.

Baking

  • Bake for 8-10 minutes until soft but set. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Preparing Filling

  • In another bowl, blend the softened butter with powdered sugar until smooth. Add in the milk, peppermint extract, and vanilla extract, mixing until well combined.

Assembling Cookies

  • Spread a generous amount of the peppermint filling onto the flat side of one cookie. Place another cookie on top to create a sandwich, and sprinkle Peppermint Crunch Sprinkles on the filling before placing the top cookie.

Serving

  • Enjoy your Homemade Peppermint Oreos right away or allow them to sit for a bit to enhance the flavors.

Notes

Chill dough if too sticky. Store in airtight container. Variations include chocolate mint filling or white chocolate drizzle.
