Ingredients

  • 4 cups chicken broth Use high-quality broth for best flavor.
  • 1 large potato, diced Diced into small cubes.
  • 1 tablespoon fresh thyme Or use 1 teaspoon dried thyme.
  • 1 tablespoon fresh oregano Or use 1 teaspoon dried oregano.

For the Soup Ingredients

  • 2 cups pre-cooked rotisserie chicken, shredded Adds flavor and saves time.
  • 1 cup noodles Egg noodles recommended.
  • 1 cup cream Heavy or light, adjust as preferred.

Preparation

  • In a large pot, pour in the chicken broth and add the diced potatoes, thyme, and oregano. Bring to a gentle simmer for 10-15 minutes.

Cooking Noodles

  • Add the noodles to the pot and cook for approximately 8-10 minutes until tender. Taste to ensure the right texture.

Adding Chicken

  • Gently stir in the shredded rotisserie chicken and allow it to warm through for about 3-5 minutes.

Creaming the Soup

  • Stir in the cream to achieve a rich, creamy texture. Adjust the amount of cream based on your preference.

Finishing Touches

  • Season with salt and pepper to taste, then serve hot in bowls with an optional sprinkle of fresh herbs on top.
