  • 1/4 cup cornstarch Increase for a thicker pudding.

Preparation

  • In a medium saucepan, whisk together the almond milk and cornstarch until the mixture is smooth and free of lumps.
  • Place the saucepan over medium heat, and continue whisking gently until it starts to thicken, about 5-7 minutes.
  • Once thickened, remove it from the heat and stir in the honey or maple syrup, vanilla extract, and salt. Mix until everything is well combined.
  • Allow the mixture to cool slightly, then fold in the Greek yogurt until smooth and creamy.
  • Divide the pudding into serving bowls or cups, cover them, and refrigerate for at least 2 hours to set.
  • Serve chilled, enjoying it plain or with your choice of toppings.
