  • 2 cups cooked chicken, shredded Use leftover rotisserie chicken for convenience.
  • 1 cup frozen spinach, thawed and drained Ensure spinach is well-drained to avoid excess moisture.
  • 1 cup canned artichoke hearts, drained and chopped Add flavor and texture to the casserole.
  • 1 cup cream cheese, softened Can substitute with low-fat cream cheese for a lighter option.
  • 1/2 cup Greek yogurt Adds creaminess and protein.
  • 1 cup shredded mozzarella cheese Provides a gooey texture.
  • 1 cup shredded cheddar cheese For flavor richness.
  • 1/2 cup grated Parmesan cheese Use for topping and flavoring.

Seasonings

  • 2 cloves garlic, minced Provides aromatic flavor.
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes Optional for spice.

Garnish

  • Fresh parsley, chopped For garnish, adds color and freshness.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked chicken, thawed spinach, chopped artichokes, cream cheese, Greek yogurt, mozzarella cheese, cheddar cheese, and half of the Parmesan cheese.
  • Stir in the minced garlic, onion powder, garlic powder, salt, black pepper, and crushed red pepper flakes, if using. Mix everything until well combined.
  • Transfer the mixture into a greased 9x13-inch baking dish, spreading it evenly.
  • Sprinkle the remaining Parmesan cheese on top for a golden crust.

Cooking

  • Bake in the preheated oven for approximately 30-35 minutes, or until the casserole is bubbly and the top is lightly browned.
  • Remove it from the oven and let it sit for about 5 minutes before serving.

Notes

Store leftovers in an airtight container. Can be refrigerated for up to three days, or frozen for up to three months. Reheat at 350°F (175°C) until heated through.
