  • 2 cups cooked, shredded chicken Rotisserie chicken can be used for convenience.
  • 2 cups fresh spinach, chopped Finely chop for better texture.
  • 1 cup artichoke hearts, chopped
  • 1 cup Greek yogurt
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon crushed red pepper flakes Optional for heat.

Other

  • 1 tablespoon olive oil For greasing the baking dish.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken, chopped spinach, chopped artichoke hearts, Greek yogurt, cream cheese, mozzarella cheese, and Parmesan cheese.
  • Add the garlic powder, onion powder, black pepper, salt, and crushed red pepper flakes (if using) to the mixture. Stir everything until well combined.
  • Lightly grease a baking dish with olive oil.
  • Transfer the mixture into the baking dish, spreading it evenly.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until the casserole bubbles and the top turns golden brown.
  • Remove from the oven and let it cool for a few minutes before serving.
