Ingredients
  

Main Ingredients

  • 2 cups cooked and shredded chicken Use rotisserie chicken or any leftover chicken.
  • 1 cup fresh spinach, chopped
  • 1 can artichoke hearts, drained and chopped (14 ounces)
  • 1 cup plain Greek yogurt Substitute with coconut yogurt for dairy-free option.
  • 1 cup cream cheese, softened Ensure it's softened for easy mixing.
  • 1 cup shredded mozzarella cheese Can substitute with cheddar or pepper jack.
  • 1/2 cup grated Parmesan cheese

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes Optional for added heat.

Miscellaneous

  • 1 tablespoon olive oil For greasing the baking dish.
  • 1 cup breadcrumbs Optional for topping.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked and shredded chicken with the chopped spinach and artichoke hearts.
  • In a separate bowl, mix the Greek yogurt, cream cheese, mozzarella cheese, and Parmesan cheese until smooth. Add the garlic powder, onion powder, salt, black pepper, and red pepper flakes if using. Stir this mixture into the chicken and vegetable blend.
  • Lightly coat a baking dish with olive oil to prevent sticking. Pour your chicken and cheese mixture into the prepared baking dish and spread it evenly.
  • If you like a crunchy topping, sprinkle breadcrumbs evenly over the casserole.

Baking

  • Bake in the preheated oven for 25-30 minutes or until the casserole is bubbly and the top is golden brown.
  • Once done, remove from the oven and let it cool for a few minutes before serving.

Notes

For the best results, use freshly cooked chicken. Adjust seasonings to your preference and try different cheese varieties for new flavors. Store leftovers in an airtight container for 3-4 days in the refrigerator, or freeze for longer storage.
