  • 1 lb ground turkey or beef Choose ground turkey for a leaner option.
  • 1 unit onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 cups lasagna noodles, broken into pieces
  • 1 cup ricotta cheese Can mix with herbs for added flavor.
  • 1 cup shredded mozzarella cheese For topping before serving.
  • 1 cup spinach or kale Can customize with other greens.
  • 1 tsp Italian seasoning
  • to taste salt and pepper Adjust according to preference.
  • to taste Olive oil For sautéing.

Instructions
 

Preparation

  • Heat a drizzle of olive oil in a large pot over medium heat.
  • Sauté chopped onion and minced garlic until soft and fragrant, about 3-4 minutes.
  • Add ground turkey or beef to the pot and cook until fully browned, breaking it apart as it cooks for even cooking, about 5-7 minutes.
  • Stir in crushed tomatoes and broth, then sprinkle in Italian seasoning and bring to a boil.
  • Once boiling, add broken lasagna noodles and stir well. Let it simmer for about 8-10 minutes or until noodles are tender.
  • Stir in ricotta cheese and spinach or kale, season with salt and pepper to taste.
  • Ladle soup into bowls and top with shredded mozzarella cheese, allowing it to melt slightly before serving.

Notes

For a thicker soup, reduce broth slightly. This dish pairs well with crusty bread for dipping or a fresh side salad.
