  • 1 cup cottage cheese Choose full-fat or low-fat based on preference
  • 1 cup shredded cheese (cheddar or a cheese blend) For bolder flavor, try mixing in pepper jack
  • 1 medium bell pepper, diced
  • 1 medium onion, diced
  • 1 medium jalapeño pepper, finely chopped Optional for extra spice
  • 1 cup diced tomatoes Can use canned or fresh
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • to taste Salt and pepper
  • for garnish Fresh cilantro, chopped
  • Tortilla chips or fresh veggies for serving

Instructions
 

Preparation

  • Heat a non-stick skillet over medium heat, adding a splash of water or a tiny bit of olive oil to soften the vegetables.
  • Add diced onion, bell pepper, and jalapeño (if using) to the skillet, and sauté for about 5 minutes until softened.
  • Incorporate diced tomatoes, garlic powder, onion powder, chili powder, salt, and pepper into the skillet, stirring well, and let simmer for an additional 3-4 minutes to meld flavors.

Cooking

  • Reduce the heat to low, and stir in the cottage cheese until fully combined and warmed through.
  • Gradually add shredded cheese, stirring until it melts into a creamy consistency. Adjust seasoning if necessary.
  • Remove from heat and transfer to a serving bowl. Garnish with fresh cilantro.

Notes

For a creamier texture, consider blending the cottage cheese before adding it to the skillet. Let the queso sit for a few minutes after cooking to deepen the flavors.
