  • 2 large zucchini, thinly sliced Choose firm zucchinis for better texture.
  • 2 pieces chicken breasts, diced Use lean chicken breast for a healthier option.
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheese (such as mozzarella or cheddar) Feel free to use your favorite cheese.
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil Use extra virgin for more flavor.
  • 1 teaspoon Italian seasoning Adjust to taste.
  • to taste Salt and pepper
  • Fresh basil, for garnish (optional) Adds freshness before serving.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the diced chicken, sliced zucchini, halved cherry tomatoes, and minced garlic.
  • Drizzle olive oil over the mixture and sprinkle the Italian seasoning, salt, and pepper. Toss until everything is evenly coated.
  • Transfer the mixture into a greased baking dish.
  • Spread the shredded cheese evenly on top of the chicken and vegetable mixture.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  • Remove the foil and continue baking for an additional 15 minutes or until the chicken is fully cooked and the cheese is beautifully melted and golden brown.
  • Once cooked, let it cool for a few minutes and garnish with fresh basil if desired. Serve and enjoy!

Notes
