  • Heat olive oil in a large pot over medium heat.
  • Add the diced onion to the pot and sauté until it becomes translucent, about 5 minutes.
  • Stir in the minced garlic and cook for another minute, ensuring it does not burn.
  • Add the chopped cabbage to the pot, mixing well with the onion and garlic.
  • Cook the cabbage for about 5 minutes, allowing it to wilt slightly.
  • Pour in the vegetable broth, ensuring the cabbage is fully submerged.
  • Bring the broth to a boil, then reduce the heat and let it simmer for 15-20 minutes until the cabbage is tender.
  • Stir in the grated parmesan cheese, chopped thyme, and parsley. Mix well until the cheese melts and incorporates into the broth.
  • Season with salt and pepper to taste. If desired, add a squeeze of lemon juice for a fresh touch.
  • Let the dish simmer for an additional 5 minutes for the flavors to meld together.
  • Serve hot, garnished with extra herbs or parmesan if desired.
