  • 1 can black beans, drained and rinsed Use high-quality beans.
  • 1 can kidney beans, drained and rinsed Use high-quality beans.
  • 1 can pinto beans, drained and rinsed Use high-quality beans.
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder Adjust for spiciness.
  • 1 teaspoon cumin
  • to taste Salt and pepper Adjust according to preference.
  • as needed Olive oil To coat the pot.

Instructions
 

Preparation

  • Place a large pot over medium heat and add olive oil to lightly coat the bottom of the pot.
  • Once the oil is heated, add chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes, stirring occasionally.
  • Stir in chili powder and cumin, cooking for about a minute to release the spices' aromas.

Cooking

  • Add the black beans, kidney beans, pinto beans, and diced tomatoes. Mix well to combine.
  • Season with salt and pepper to taste and bring the mixture to a gentle boil.
  • Reduce the heat to low, cover the pot, and let it simmer for 15 to 20 minutes.
  • Once ready, ladle the chili into bowls and add optional toppings as desired.
