Ingredients
  

Vegetables

  • 2 medium rutabagas, peeled and diced
  • 4 large carrots, peeled and sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced

Liquids

  • 1 cup vegetable broth
  • 1 cup milk (or any milk alternative)

Cheese and Toppings

  • 1 cup shredded cheese (cheddar or your preferred variety)
  • 1 cup breadcrumbs (for topping, optional)

Seasonings

  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Garnish

  • Fresh parsley for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large pot, bring water to a boil and add the diced rutabaga and sliced carrots. Cook for about 10 to 15 minutes, or until they are fork-tender. Drain and set aside.
  • In a skillet, heat olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

Mixing and Baking

  • In a large mixing bowl, combine the cooked rutabaga, carrots, sautéed onions, vegetable broth, milk, shredded cheese, thyme, rosemary, salt, and pepper. Stir everything together until well mixed.
  • Transfer the mixture into a greased baking dish. If you like a crunchy topping, sprinkle breadcrumbs over the top.
  • Bake in the preheated oven for about 30-35 minutes, or until the top is golden and bubbly.
  • Once cooked, remove from the oven and let it cool for a few minutes before serving.

Notes

For a meatier option, consider adding cooked ground beef or shredded chicken. For vegan, replace milk and cheese with plant-based substitutes. Experiment with different cheese types for variety.
